two for me!

i had to come back here for the derby thread Fash!!!

For your Derby Party, a couple of recipes:

Cheese Grits
Makes 10 or more servings

It's worth seeking out Kentucky Proud Weisenberger grits for this buffet-friendly Southern classic. Find them at www.weisenberger.com.

2 cups grits

1 teaspoon salt

3 cups milk

1/2 cup butter

2 cloves garlic, peeled and mashed with the side of a knife (optional)

4 eggs, beaten

2 cups grated sharp cheddar cheese

Butter a shallow 4-quart casserole. Combine grits and salt in a large pot with 6 cups water. Stir in milk. Bring the mixture to a boil, stirring very often, reduce heat to simmer and cook, stirring often, until very thick, about 15 or 20 minutes.

Combine butter and garlic in a small saucepan over medium heat. Melt butter, and keep on the heat until garlic becomes aromatic. Remove garlic cloves, and stir butter into grits. Beat 1 cup of grits into eggs, then turn the eggs back into grits and stir to blend. Remove grits from heat, and stir in 1 and one-half cups cheese until blended. Pour into casserole, and sprinkle with remaining cheese. Bake at 400 degrees until brown around the edges. Or refrigerate (to make a firmer grits mixture) until thoroughly chilled, then bake at 350 degrees for 1 hour.

Kentucky Bourbon Balls
INGREDIENTS:
1 stick butter
1 box powdered sugar
1 cup chopped pecans
4 T. Bourbon
1 large package semi-sweet chocolate chips (real chocolate, not imitation)
1 T. paraffin wax
PREPARATION:
Cream butter and sugar then add chopped pecans. Mix well and add in the Bourbon. Chill for an hour to make it easier to handle then roll into small balls. Refrigerate overnight.
Melt the chocolate and paraffin in a double boiler until smooth and well mixed.

Dip the chilled Bourbon balls into the chocolate and place on a cookie sheet lined with waxed paper. Chill until hard.

Hmmm, okay! I have lots of hats but not sure if I have one appropriate for the occasion. Must I find a suitable one before picking my horse? Razz

OG, do you know anything about the KY Derby? Razz It's a BIG deal for the ladies to wear awesome hats! Google "KY Derby hats" (images). You'll get the idea. SandraK posted one above that was my favorite three years ago. This thread is an annual thingy......it is sooooooo fun!
